Chinese New Year has arrived and the year of the rooster is upon us, so we’re sharing one of our favourite Chinese inspired recipes: it’s time to brighten up the season with this mouth-watering dish.
VEGETABLE RICE PAPER WRAPS WITH SOY DIPPING SAUCE
Light and simple, these little wraps are truly delicious. The dressing is full of flavour with incredible balance and can be used for all sorts of dished, raw and otherwise: the perfect Chinese inspired recipe.
Extra Virgin Olive Oil
Rice paper (4 sheets)
Sesame seeds, toasted
Finely shred all of the vegetables and mix in a bowl with some extra virgin olive oil, avocado, some lemon juice, salt, pepper and chopped herbs. Allow to soften.
To make the dipping sauce, add 2 tsps. of tamari or soy to a bowl and then add the remaining ingredients to create a balanced dressing, full of heat, sweetness, sharpness and saltiness. Set aside.
Soak the rice paper wrap in water for at least 30 seconds and then, on a wet chopping board, use the rice paper wraps to wrap the vegetables, like a spring roll, keeping as tight as possible.
Lift the wraps on to a board, and finish with the dip.
