Minced turkey breast, 500g
Courgette, 1 medium, 200g, grated
Spring onion, 1 stalk, slice
Fresh herbs, 50g e.g. tarragon, parsley, mint, Basil
Garlic, 2 cloves, diced
Ginger, 25g, grated
Cumin, 1 tsp
Smoked paprika, 1 tsp
Chili, 1/4 tsp (optional)
Flaked sea salt, 1 tsp
Black pepper, 1/2 tsp
Olive oil, 2 tbsp
Large Portobello mushrooms, 8
Sesame seeds, 2 tbsp
Sea salt and black pepper to taste
Tomato, 1 sliced
Baby gem lettuce, 2 heads
1.Pre-heat oven or BBQ 180C
2.Prepare vegetables and evenly combine with spices and herbs. Add turkey
and mix well with spatula or hands.
3.Make 4 patties. On a hot oven-proof pan, add oil and cook patties for 3
mins on each side and into oven for 12-15 mins until thoroughly cooked.
4.Meanwhile, cook Portobello mushrooms skin side down on med heat in a non-stick pan with lid on for 8 mins. When ready, take off heat, flip and sprinkle sesame seeds on 4 of the 8 mushrooms and a pinch of salt and pepper.
5.Assemble burger when ready with toppings
