Pink Gin & Fig Fizz

This fruity cocktail is the perfect accompaniment to the festive season, and a novel way to drink gin this season. Mix up our Pink Gin and Fig Fizz in a cocktail shaker and pour into coupes for an impressive aperitif or drinks-party refresher.


120ml water
170g honey
4 fresh figs, (3 diced, 1 sliced, for garnish)
1 measure pink gin
5tsp fresh lemon juice
5tsp fig honey syrup
Tonic water (to preference)



For the syrup:

1. Place the water, honey and 3 diced figs in a small saucepan and bring to the boil. Turn off the heat and let it steep for 10 minutes.

2. Strain the figs from the liquid and pour the fig honey syrup into a bottle to store. Cool to room temperature before using. Any leftover syrup can be stored in the fridge for up to one week.

For the cocktail:

1. Add ice, lemon juice, fig syrup and gin to a cocktail shaker. Shake to combine and strain into a coupe or martini glass, then top with a little tonic water. Garnish with a lemon twist and fig slices.
